Yummy breakfast...

Quinoa Infused with Coconut
1 cup coconut milk
1 cup quinoa
2 tablespoons coconut (organic coconut flakes)
1/4 teaspoon seasalt
1 tablespoon of pure maple syrup (if you have a sweet tooth)

Bring coconut milk and salt to the boil, add quinoa, coconut and maple syrup. Simmer with lid on for 20 minutes, stirring occassionally.
Steam for a further 5 minutes without lid.
Fluff with a fork.
Best served cold with fresh pineapple and banana and maybe a dash of rice milk.
Yum!
